Easter Cake

The name comes from munna, which is Arabic for "provision of the mouth" gift that Muslims were their masters. Its use is restricted only to Easter Day and it is traditional for the gifting godparents to their godchildren.

ingredients:

For the dough:

- 100 gr bread flour.
- 10 g of fresh yeast.
- 60 g of water.

For Easter cake batter:

- 440 gr bread flour.
- 10 g of fresh yeast baker.
- 3 eggs (for dough).
- 140 g of sugar.
- 80 g of olive oil.

- Grated rind of a lemon.
- 15 gr of orange blossom water.
- 1 pinch of salt.

To decorate:

- 1 egg (to paint).
- Aniseed colors.
- Sugar.
- Eggs (for baking).

Preparation:

- The night before preparing the Easter cake, prepare the dough: Dissolve yeast in warm water fresh. Put the flour donut-shaped and in the center pour the dissolved yeast with water and knead well with your fingers. Reserve in the fridge until the next day.
- Put in a large bowl the 100 gr bread flour making a hole in the middle, fresh yeast (rubbing with the fingertips until disposing).
- Once you have mixed the ingredients, add the sourdough, lightly beaten eggs, olive oil, sugar, grated lemon peel, orange blossom water and salt and knead for 6 -8 minutes. Until dough is smooth and slightly sticky.
- Shape the dough into a ball and leave in a warm, draft-free and covered with a cloth, and let rise for 1 hour.
- Dump the dough on the work table greased with olive oil and, with a knife, cut it into 2 halves.
- Shape each portion into a ball of dough.
- Find a piece of dough (each serving) for decorative reasons.

- Shape each portion into a ball of dough and make a large hole in the center, with the fingers.
- Arrange each portion of dough on a baking tray covered with baking paper.
- With the reserved dough can make decorative braids or want. Cover the dough with a cloth while you do it.
- When the adornments are made, arrange them on the two portions of dough, back cover and allowed to ferment for 1 hour.
- The eggs are usually put to cook half of fermentation, wash them thoroughly before putting them into the dough. When you are about to finish the second fermentation put the oven to 175 º.

- Before placing the dough for baking, paint with beaten egg, sprinkle a little sugar and anise.
- Put the baking sheet on the bottom and let the cake bake for 20 minutes Easter.
- Serve cold.
