Spanish Pooch

This sweet is typical of the province of Gerona (Catalonia, Spain). In the Rambla Street and Silverware it stand a very nice part of the legends of Gerona, the amorous, a character who should be the origin of the pooch. This acrobat who entertained the citizens in a time of quarantine during an epidemic, fell in love with the daughter of a baker. During a visit to his girlfriend when her father arrived, he hid in a sack of flour until sneezed doing "xu-xu". To avoid angering the baker, promised to marry her daughter and give her a sweet recipe: the pooch, named in memory of sneeze.


For the pastry cream:

- 500 ml of milk.
- 150 grams of sugar.
- 4 egg yolks.
- 2 tablespoons cornstarch.
- Lemon rind.
- 1 cinnamon stick.

For the pooch:

- 375 gr of flour.
- 2 eggs.
- 110 ml of milk.
- 2 packets of baking powder.
- 25 grams of sugar.
- Scraping of 1 orange and lemon.
- A pinch of salt.


For the pastry cream:

- Putting heat the milk with the lemon peel and cinnamon.
- Meanwhile, in a bowl beat the egg yolks with the sugar and cornstarch.
- When milk is hot removed the cinnamon stick and lemon.
- Pour the cream bowl with the yolks into the saucepan of milk, stirring constantly. Mix over low heat until thickened.
- Remove from heat, put in a bowl and cover well with plastic wrap (to put it tight against the cream from drying).
- Put in the fridge.

For the pooch:

- Mix the yeast with 100 grams of flour and milk (knead with your hands). Let stand in a warm place (the dough should be in a bowl and tightly covered with a cloth) until doubled in volume.
- Training on the bench and flour a crown in the center lay eggs, melted butter, the grated lemon and orange, salt and dough prepared earlier.
- Add sugar and knead until dough is thin.
- Roll out the dough with a rolling pin and cut into strips (about 10 x 10 cm).
- On each strip place 1 tablespoon or two of cream and roll.
- Let stand a few minutes (15 approx).
- Fry in hot oil (not much) to be made inside.
- Drain and sprinkle with sugar.
